孔雀石綠在當(dāng)前更為人所熟知的用途是在2002年之前作為淡水水產(chǎn)的抗菌劑和殺蟲(chóng)劑，被用于對(duì)付魚(yú)類(lèi)或魚(yú)卵的寄生蟲(chóng)、真菌或細(xì)菌感染。 需要強(qiáng)調(diào)的是，雖然曾被作為治療魚(yú)病的“藥物"，但絕不能想當(dāng)然地認(rèn)為它出現(xiàn)在食品中是可以接受的。

Malachite green is currently more well-known for its use as an antibacterial agent and insecticide in freshwater aquaculture before 2002, used to combat parasites, fungi, or bacterial infections in fish or fish eggs. It should be emphasized that although it has been used as a "medication" for treating fish diseases, it cannot be taken for granted that its appearance in food is acceptable.

研究發(fā)現(xiàn)，孔雀石綠進(jìn)入水生動(dòng)物體內(nèi)后，會(huì)快速代謝成脂溶性的無(wú)色孔雀石綠，兩者毒性較高且殘留時(shí)間長(zhǎng)，對(duì)水生動(dòng)物都具有潛在的致癌、致畸、致突變作用。因此無(wú)論是我國(guó)，還是美國(guó)、歐盟、日本都對(duì)孔雀石綠作為獸藥的生產(chǎn)、經(jīng)營(yíng)和使用下了禁令，對(duì)于進(jìn)口水產(chǎn)品中孔雀石綠殘留量的把控則更為嚴(yán)格。

Research has found that when malachite green enters aquatic animals, it quickly metabolizes into fat soluble colorless malachite green. Both have high toxicity and long residual time, and have potential carcinogenic, teratogenic, and mutagenic effects on aquatic animals. Therefore, both China, the United States, the European Union, and Japan have imposed bans on the production, operation, and use of malachite green as a veterinary drug, and stricter control over the residual amount of malachite green in imported aquatic products.

然而遺憾的是，近年各地多次檢出有孔雀石綠殘留的水產(chǎn)品，不少來(lái)自大型超市和水產(chǎn)品流通市場(chǎng)，品種涉及鯉魚(yú)、鯽魚(yú)、鳊魚(yú)、烏魚(yú)、鱖魚(yú)等等，猶以產(chǎn)粘性卵的魚(yú)類(lèi)(鯉魚(yú)鯽魚(yú))為多。因?yàn)樵趯?shí)際水產(chǎn)繁育生產(chǎn)中，產(chǎn)粘性卵的魚(yú)類(lèi)多在低溫時(shí)節(jié)繁殖，所產(chǎn)出的卵粒容易產(chǎn)生水霉病。而孔雀石綠恰是水霉病的克星，且孔雀石綠目前尚沒(méi)有廉價(jià)又高效的替代品。養(yǎng)殖業(yè)和運(yùn)輸業(yè)從業(yè)者都想用藥盡可能減少死魚(yú)量，謀求最大收益，故而近年雖然禁控力度加強(qiáng)，仍有時(shí)常發(fā)生檢出違禁使用現(xiàn)象。

Unfortunately, in recent years, there have been multiple detections of malachite green residues in aquatic products in various regions, many of which come from large supermarkets and aquatic product circulation markets. The varieties include carp, crucian carp, bream, mullet, mandarin fish, and more, especially the fish that produce sticky eggs (carp and crucian carp). Because in actual aquaculture production, fish that produce sticky eggs often breed at low temperatures, and the eggs produced are prone to water mold disease. And malachite green is just the nemesis of water mold, and there is currently no cheap and efficient substitute for malachite green. Both aquaculture and transportation industry practitioners want to use drugs to reduce the number of dead fish as much as possible and seek maximum profits. Therefore, although the prohibition and control measures have been strengthened in recent years, there are still frequent cases of illegal use detected.
